Ron and Barbara Crain have been operating Crain Dairy in northwest Oklahoma since 1991. Barbara eventually began experimenting with their milk and made a few small batches of Greek yogurt. She received raving reviews. After 10 years of selling their milk to a national dairy cooperative and seeing their milk go straight out of the door, the Crains had to ask: why mix high quality, grass-fed milk with milk from confinement dairies and ship it thousands of miles away when it could be transformed into delicious foods for people right here in Oklahoma?

So in 2001, the Crains began working with the Food and Agricultural Products Center at OSU and with Pladot, an Israeli dairy equipment supplier, to bring their dream to reality. They built a small, certified production facility, learned to make a handful of dairy products from scratch, and named the operation Wagon Creek Creamery. WCC has been selling fresh, grass-fed dairy products since the summer of 2005.

In 2007, the Crains added grass-fed beef and pasture-raised veal to their product listing. The cows and steers are raised on the farm’s 157 acres, and they are never given grain or growth hormones (rBST). Their healthy, all-grass diet ensures healthier dairy products.

Today, Wagon Creek Creamery remains Oklahoma’s only 100% grass-fed dairyprocessor . Their list of products has expanded to include not only Greek yogurt and butter but also aged, raw milk cheeses, creme fraiche, smoothies, granola and granola bars. Apart from dairy, they have also welcomed chickens, pigs, and bees to the farm. Pastured eggs are available now. They hope to offer pastured pork and honey very soon.

Grass-fed Dairy Products

Greek Yogurt

Rich and creamy, our Greek yogurt is made from the milk from our grass fed dairy cows.  Wagon Creek Creamery was among the first in the nation to produce Greek yogurt and we are one of the very few to produce whole milk Greek yogurt from grass fed dairy cows.  Also available in lowfat and nonfat.





Yogurt Cheese

Yogurt Cheese is a highly concentrated version of our Greek yogurt.  It is quite thick, similar to cream cheese, and can be eaten as is, or reconstituted back to the texture of Greek yogurt.  To reconstitute, empty contents into a bowl and add milk or water.  Start with half the amount of liquid as compared to yogurt cheese (8 oz container yogurt cheese, start with 1/2 cup liquid).  For smoothest texture, blend with an electric hand mixer.  Continue to add liquid until you reach the desired consistency.  Generally, this will be about a 1 to 1 ratio of yogurt cheese to liquid. Because our cows are all dry (on maternity leave) during the winter, we have developed this version of yogurt that freezes and thaws well.  We hope you enjoy it!

Butter

Grass fed butter!  Made from the milk from our grass fed dairy cows, our butter is a special find.  We don't need to add color to our butter, it's naturally yellow thanks to our cows's grass diet.

Eggs

Pastured Chicken Eggs

Each morning the doors to the chicken coops are opened and the hens race out to start foraging.  They roam the farm all day, then return to their coops at night where they are safe from predators.  They help control the pest population, consume scraps, eat plants and turn all of it into delicious eggs.

Grass fed beef and grass fed dairy go hand in hand.  All of our cattle are in a rotational grazing system and spend their lives in the great outdoors.

For those who love veal, but hate the way veal calves are traditionally raised, we offer an alternative. Our veal calves spend their entire lives by their mothers' sides out on the pastures.  Veal cuts, quarters and halves are available several times a year.

Our granola recipe uses only seven wholesome ingrediets: oats, almonds, walnuts, honey, extra virgin olive oil, evaporated cane juice, and sea salt.  Developed by a cousin of ours, this is certainly the best tasting granola we've ever eaten.

Our granola bars are made with our granola, ground peanuts, oat flour and honey.  Moist, but not sticky, these are a great snack or quick breakfast.
